Ted Lasso Biscuits: Make Shortbread Like a Boss

Howdy! Inspired by Ted Lasso, I wanted to try making biscuits like a boss. 

So the top secret Ted Lasso biscuit recipe isn’t totally revealed in the series, but there is an Easter egg in an episode showing part of his recipe.

According to Ted, “Takin’ on a challenge is a lot like riding a horse. If you’re comfortable while you’re doin’ it, you’re probably doin’ it wrong.” But have no fear; these biscuits shouldn't be a challenge. Only five ingredients, they are sure to impress your boss and take almost no time to make!

What to expect:

Not-too-sweet shortbread that will dissolve in your mouth. Ted Lasso biscuits--which I'm now calling them--are golden brown and crumbly. The subtle vanilla flavor will make you crave biscuit after biscuit. They are rather plain so if you’re looking to dress these babies up, I would recommend topping them with melted chocolate.

What I changed:

Nothing! The recipe was true to form; once the biscuits look golden in the oven, they’re ready to come out.

Original Recipe by People:

INGREDIENTS:

  • 1 cup unsalted butter, softened, cut into pieces, plus more for greasing
  • 2 cups all-purpose flour
  • ½ cup granulated sugar
  • 1 tsp. pure vanilla extract
  • ½ tsp. fine sea salt

 

DIRECTIONS:

  1. Preheat oven to 350°. Grease a 9-inch square baking pan with butter. Line bottom and sides with parchment paper, leaving a 1-inch overhang on all sides. Set aside.
  2. Beat butter, flour, sugar, vanilla and salt with a stand mixer fitted with a paddle attachment on low speed until mixture is well-combined and just beginning to come together, 45 seconds to 1 minute.
  3. Using your hands, press dough evenly into prepared pan. (If mixture is too sticky, place a sheet of parchment paper on top of dough, and press into pan. Remove parchment before baking.)
  4. Bake until edges are golden brown, 30 to 35 minutes. Remove from oven, and cool completely in pan, about 1 hour. Using parchment paper as handles, lift biscuits from pan. Cut into 18 rectangles
