Your Nutty Uncle smoothie

So she may not be a looker, but it’s what’s on the inside that counts--of the smoothie that is. My roommate and I used to make this smoothie every morning, secretly hoping that we would be the first one to the blender before work/school. (She usually got there first.)

We discovered it after taking one too many trips to heaven on earth: Whole Foods. A juice bar within Whole Foods, Real Good Juice, is responsible for creating this heavenly mix: banana, almond butter, almond milk, cacao and cold brew. Simple enough, right?

We deemed our version Pretty Good Juice—it’s not quite as good as the pros do it, I’ll admit, but it’s pretty good!

Also, I would like to clarify that this is not my full breakfast/brunch by any means, but a mere partner in crime to whatever else I might be having. The smoothie's velvety texture and sweet taste goes down easily--and quickly. To be honest, sometimes knowing that this smoothie is just a few blends away helps me get out of bed in the morning!

The smoothie is more interesting than plain coffee and it’s a delicious way to include fruit and a bit of protein right off the bat. I’m no nutritionist, but it sounds pretty nut-ritious to me.

Speaking of nuts, I like to swap out the nut butters and milks just for kicks. Although the original recipe calls for almond butter and almond milk, after some trial and error (*LOTS of trial and error), I’ve found my favorite version includes soy milk and peanut butter. But you should try it out and see for yourself—go nuts!

 

Our Pretty Good Juice Recipe:

  • 1 banana
  • 1 tsp. cocoa powder
  • 1 tbsp. peanut butter or almond butter
  • 1/4 cup of almond milk or soy milk
  • 1/4 cup of cold brew coffee (I used Starbucks blonde roast)
